Almost Perfect Banana Muffins

Every recipe I’ve tried either seems to be too dry, or too gooey, or too sweet, or not sweet enough, so I decided to take some of my favorite ingredients and come up with my own recipe. It definitely took some trial and error, but I think I finally found what I am calling “Almost Perfect Banana Muffins” (because nothing in life is ever perfect ). My kids love them too and there are so many healthy ingredients hidden in them!

Ingredients

  • 2 cup almond flour

  • 1/2 cup gluten free oats

  • 2 very ripe bananas mashed

  • 2 eggs

  • 1 serving vanilla protein powder

  • 2 TBSP. honey (or maple syrup)

  • 1 TBSP. baking soda
    Pinch of salt

  • 2 TBSP. flax seeds

  • 1 TBSP. chia seeds

  • 1/4 cup peanut butter

  • 1/4 cup almond milk

  • 2 TBSP. coconut oil (or softened butter)

  • 1 TBSP. Cinnamon

  • Optional ingredient: chocolate chips

Instructions

  1. Mix dry ingredients in one bowl and wet ingredients in another bowl, then combine and mix together.

  2. Fill a mini muffin pan with muffin liners and then spoon batter into each one. Makes approximately 24 mini muffins.

  3. Bake at 350 degrees for 10-12 minutes.
