Peanut Butter Banana Blondies

Ingredients

  • 1 cup smooth natural peanut butter (can sub almond butter)

  • 1 ripe banana, mashed

  • 1 egg, beaten (or flax egg)

  • 1/4 cup maple syrup

  • 1/2 tsp baking soda

  • 1/4 cup chocolate chips

  • 1/4 cup peanut butter chips


Instructions

  1. Preheat oven to 350 degrees. Line an 8x8 pan with parchment paper and set aside.

  2. Combine all ingredients except for chips in a bowl. Mix well until a thick, smooth batter forms.

  3. fold chips into batter and mix.

  4. Pour batter into parchment-lined pan. Smooth out the top so the batter is even.

  5. Bake for 15-20 minutes, or until done.

  6. Let bars cool (make sure you let them cool extra long because they are gooey). Slice into 9 blondies.
